Tanya’s Tasty Tips: Meal Makeover (Sloppy Joes)
Growing up, I loved eating Sloppy Joes. I wanted to create the same flavors while boosting the fiber. Adding lentils did the trick—and you won’t even notice they’re in there! Serving on whole wheat buns adds even more fiber. Stick to this recipe and you’ll save 300 calories and 16 g fat.
• ¾ pound lean ground beef
• ½ cup chopped onion
• ½ cup chopped green bell pepper
• 1 garlic clove, minced
• 1 8-ounce can tomato sauce
• ½ cup uncooked lentils
• 2/3 cup water
• ¼ cup ketchup
• 1 tsp red wine vinegar
• ½ tsp paprika
• ½ tsp salt
• ¼ tsp pepper
• ½ tsp dry mustard
• 4 whole wheat sandwich buns
1. In a large skillet over medium-high heat, brown beef with onion, green pepper, and garlic. Drain well.
2. Stir in remaining ingredients except sandwich buns.
3. Reduce heat, cover, and simmer 40 to 45 minutes or until lentils are tender. Spoon ½ of mixture onto each bun.

If you want to cut the fat even more, substitute ground turkey for the ground beef. With all the spices, you would never taste difference.
For a zero fat delicious alternative, try using vegetarian “protein crumbles” instead of the beef. I know to a non vegetarian it sounds gross, but it is delicious and picks up the taste of whatever you cook it with. Even my husband, a non-vegetarian loves it! No fat, no cholesterol and delicious!
