You correctly state "Calories in vs calories out" and reference the thermodynamic balance. However, you imply by not stating alternative routes for calorie losses, that any calorie in must be "burned" through excercise or converted to fat. You educate the public that a significant number of calories can pass through the system as methane and excretement.

Something not widely known in the West - and not studied - is that Chinese medicine teaches that the pancreas needs ten hours of uninterrupted time to replenish itself each day. Historically, most people had this opportunity at night when little was consumed after dinner until breakfast. In our modern world, our late-night snacking and early-morning risings disrupts this break-time and our pancreas is not able to fully replenish itself. Practitioners of Chinese medicine regard this as one, but not the only, cause of the rise of diabetes in the West in the last 50 years.

Yip, it sure does! And as much as I am a health nut I still fall victim to eating late night snacks. Usually, the late night snacks tend to be what is easy, like that piece of pizza. Then I go to bed. I think the key to late night snacking is to watch what you are snacking on.
